We do sous vide cooking for duck it’s makes pretty tender and juicy. The duck is White Pekin ducks from Maple Leaf Farms as known as mild flavor and adaptability to various cuisines, making it the most common duck breed consumed in the United States.
Organic egg plant and green onion are cooked by duck oil and combined with our house special soba soup, this dipping sauce is warm and very flavorful best much with cold buckwheat noodles.
This duck dipping noodles are served with our house made Shitimi chili powder.

We are making house broth daily at the location using finest Dried smoked Mackerel and other sardines thick slices, over three years brewed gluten free real soy sauce, sake, little bit cane sugar and hydrogen water.
There are our choice of toppings that are not regularly seen on the market but highly recommended by THE RiCE.

After long long winter, almost the summer here!! It is the season of a cucumber. We are hand cutting cucumbers at the location to prepare fresh cucumber salad. It is the good for appetizer or refreshing your tongue during dining. We put them into sweet sour Konbu seasoned gluten free sauce and squeezed them before serving, then put another gluten free Tosazu over it.
Enjoy it with sesame and dried bonito. Meshiagare♪
